Under our trademark Maxwell Thermomachines we have developed an immersion hydrocooler. The principle consists in immersing, for a short period of time, the pallets of fruit or vegetables, in water at a temperature of between 0ºC and 1ºC, achieving shorter cooling times than with a shower system, allowing the product to be treated with antioxidants, additives or even ozone. The system can treat approximately 8,000kg of product per hour, taking a load of 2 pallets, which is the same as 8 cycles per hour.
